Ingredients:
2 - 2 1/2 pounds of fresh sardines
sea salt
freshly ground pepper
Greek oregano (rigani)
5-6 cloves of garlic, thinly sliced
1/2 cup of olive oil
1/2 cup of lemon juice
1/2 cup of water
Method:
1. Preheat oven to 355°F (180°C).
2. Remove scales and intestines from the sardines, leaving heads intact.
3. Lay sardines in a baking pan and top with all remaining ingredients, using salt, pepper, and oregano to taste (don't skimp), sprinkling evenly.
4. Bake at 355°F (180°C) for about 45 minutes.
