Ingredients:
Cake:
1 cup of walnuts, roughly chopped
2 cups of coarse semolina 1 tbsp butter
1/2 cup of grapeseed oil
Syrup:
1 stick of cinnamon
10 cloves
4 cups of water
3 cups of sugar

Method:
1. In a medium saucepan, create a syrup by bringing the water, sugar, cinnamon stick and cloves to a boil. Allow to simmer for l0 minutes to bring all the flavours together.
2. In another pan, heat up the oil and the butter. Once the butter has melted and stops bubbling, add the semolina and walnuts and continue to stir until the semolina takes on a light golden colour. This does take a while, but be careful not to burn it.
3. Remove the pan from the stove. Pour in the syrup and keep stirring. You need to be very careful because the mixture will bubble and sputter. Once all the syrup has been absorbed, put the pan back onto the flame and cook until the syrup easily comes off the sides of the pan.
4. You can pack the mixture into a Tupperware mould, or lay it out in a baking tray and cut it into diamonds.
* Enjoy the halva with a nice cup of coffee.
