Whether you are down with a cold or not, a nice, warm and spicy chicken soup is the perfect remedy. Not only for the body, but for the soul as well.
Ingredients:
1 kg skinless, boneless chicken breasts
6-8 cups of water
4 medium sized potatoes, peeled and chopped in 2 or 4
1 sweet potato, peeled and chopped
2 large tomatoes in halves
1 medium-sized onion
fresh ginger trimmings (optional)
2 1/2 tbsp olive oil
2 tbsp white vinegar
4 diced cloves of garlic
3 celery stalks, chopped
3 cups kale, roughly chopped
1-2 chicken stock cubes
sea salt and pepper
Method:
Place the chicken in a large pot with the water to boil for 10 minutes.
Add the vegetables to the pot with the salt, stock cubes and oil.
Reduce heat and simmer, skimming any foam that rises to the top, until the chicken is cooked through, about 30 minutes.
Transfer the chicken to a bowl and let cool.
Strain the broth, discarding the vegetables. Return the broth to the pot.
Add noodles to the broth and simmer for approximately six minutes.
You can also cook the vegetables a bit more and not add any kind of pasta.
When the chicken is cool enough to handle, chop it and add it to the soup.
Ladle into individual bowls.
